Kansas Corn Casserole

2 beaten eggs
1 can whole kernel corn and its juice
1 can creamed corn
2/3 c evaporated milk
2 Tbsp instant onion
1/2 tsp salt
1/4 tsp pepper
12 oz pepper jack cheese, cubed (or can use swiss cheese)
2 c coarsely crushed crackers (saltines or ritz)

Mix all ingredients together in greased dish and bake 1 hour at 350 degrees. This is killer good! We make it for all family holiday meals...so thankful Thanksgiving is next week! Enjoy!
